Use La Monarca Tortillas with this recipe from our friend, Aaron Melendrez:

3 lb Pork Leg 

1 tbs salt
6 garlic cloves
1/2 chopped red onion
1 tbs cumin
1/2 tbs Oregano
3 oranges small
2 tbs ground achiote
2 chipotle chilis from Adobe chili can
1/4 cup brown sugar
1/4 cup apple cider vinegar


- Remove moisture from pork leg
- Salt and let come to room temp
- Add all marinade ingredients into blender
Blend for 45 seconds
- put pork leg into prep bowl and pour marinade over top and spread evenly     over top and bottom . Cover & refrigerate for 1 hour
- pull out and take as much of marinade off roast. Add all marinade along with 1 cup of red wine into Instapot
- sear pork leg on each side on extremely hot cast iron with 1/4 cup oil  on each side for 3 minutes
- sear fat on sides on side as well for a few minutes
- add into Instapot with sauce, wine, and 1/2 cup of water
- cook for 50 minutes
- let steam release naturally for 15 minutes
- pull out and shred meat.
 Put back into Instapot with lid off and use sauté function for 10 minutes
- add onto cooked La Monarca Bakery Flour Tortilla with avocado, cotija, adobo crema, pickled onion and cabbage, and cilantro
